1. Are Instec STC200 series temperature controllers interchanbeable for different model of hot and cold stages/chucks/plates?

No. The STC200 series temperature controllers are individually configured for each different model of hot and cold stages, chucks, and plates, and are not interchangeable. Same as mK1000 Temperature Controllers.
